Participants from various countries blended flavours from their homelands to cook Shakou bamboo shoots in creative ways. Shakou bamboo shoots are a local specialty of Zhangcha. They taste sweet, crisp and tender, and are hailed as the "National Banquet Bamboo Shoots in China." When US President Nixon visited China in 1972, Shakou bamboo shoots were served as one of the dishes at the state banquet.
