Roberto, 28, the head chef at Prego was born in Rome, Italy. Roberto came to Guangzhou for a change in scenery and has since fallen in love with the city, enjoying local cuisines just as much as his hometown favorites.
Like most Italians he was inspired to study cuisine from his grandmothers cooking. Arriving in China 8 years ago, Roberto opened his first restaurant in Shenzhen in November 2005, joining the Sheraton, Shenzhen in 2007 changing locations three more times, including a two-year spell in Manila, Philippines. Roberto joined Prego last October, offering his own authentic Italian menu to everyone looking for refined Italian cuisine.
"It is a family style, cozy, friendly, very, very simple Italian eatery, we do home-made food that tastes good, very simple, very clean."
Roberto likes to offer his guests an authentic Italian experience, importing approximately 70% of his menu from around the world, including truffles and cheese from Italy, pork from Spain and lamb from Australia.
"I've got very good, excellent, Buffalo Mozzarella. It's from near my place, near my father's hometown.
…Can I work with the local beef? Yes I can. Do I want to? No. You need some self-respect."
Roberto has kept the authentic taste of Italy in his dishes, offering conventional Italian flavored dishes designed for sharing as well as a traditional Italian meal with separate courses of antipasti, home made pasta, pizza or meat and fish from the grill. Prego has offerings to suit both local Chinese eating styles as well as the more conventional Italian way of eating.
