In almost every city in China, you'll find a restaurant called Shaxian Delicacies. This nationwide chain traces its roots to Shaxian, a county in Sanming, Fujian.
Over a thousand years ago, migrants fleeing wars in northern China brought their diverse food traditions here, creating a wide variety of local snacks. Today, Shaxian cuisine includes more than 240 dishes, ranging from wontons and noodles to buns, all affordable and filling. Since the late 20th century, the people of Shaxian have spread these flavors across China and even abroad, transforming humble snacks into a phenomenon.
Born from migration and carried by migration, it reflects how Chinese food culture evolves, travels, and connects people.
