Why you should eat spring vegetables during this solar term

"Wisteria flowers bloom like snow falls in spring. They dance in the intoxicating wind, like water splashes."

The Spring Equinox starts on March 20 and ends on April 4 this year. It's the 4th solar term of the year, which signals the equal length of the day and night time. On the day of the Spring Equinox, the sun is directly above the equator. After the equinox, the sun moves northwards, resulting in gradually longer day times in the Northern Hemisphere and longer nights in the Southern Hemisphere.

According to Rao Yuansheng, a famous Cantonese cultural scholar, there is a custom of eating spring vegetables during the Spring Equinox. In Guangdong, "spring vegetables" also refers to a special kind of wild amaranth. The ancient teachings in the Chinese classic, Huangdi Neijing, suggests that people eat seasonal foods to help preserve health and bring good luck. During the Spring Equinox, people will make soup with "spring vegetables" and fish slices, as these ingredients are rich in nutrition.
