Salt-baked chicken a traditional dish in south China

Salt-baked chicken is a traditional dish in Hainan and Guangdong. The chicken is wrapped in parchment and slow-baked in a clay pot with piping-hot coarse salt. A few hours later, the chicken is transformed by the salt which permeates it and tenderizes the flesh, while the juices and fats are retained.
