China Southern Airlines to serve Cantonese cuisine on flights

Imagine savouring the rich flavours of Cantonese cuisine while cruising at 30,000 feet. Thanks to the collaboration between Nanland Air Catering and the iconic China Hotel, this dream has now become a reality.

At the "Dreaming in the Clouds, Enjoying Lingnan Delicacies" signing ceremony on January 9 in Guangzhou, the two industry leaders unveiled plans to redefine in-flight dining with a focus on authentic Lingnan flavours. From the heart of Cantonese culinary traditions to the cabins of China Southern Airlines, travellers can now embark on a gastronomic journey like no other.

A culinary collaboration with deep roots

Nanland Air Catering, a subsidiary of China Southern Airlines, is one of the largest airline catering service companies in China's civil aviation industry. China Hotel, established in 1984, is one of China's first five-star hotels and a pioneer in the hospitality industry. Their partnership stems from a shared vision to bring Cantonese cuisine to new heights. Since 2017, Nanland Air Catering and China Hotel have worked together to showcase Lingnan culture through food. In 2023, the duo made waves at the inaugural CATA Aviation Conference in Beijing, wowing attendees with a "Rediscovery of Iconic Cuisine" menu that revived forgotten Cantonese classics.

This year, the collaboration reaches new heights with exclusive menus for China's first domestically produced C919 aircraft, offering passengers a taste of Cantonese culture mid-flight.

A menu that delights the senses

The star of the in-flight dining experience is a personalized "Classic Cantonese Meal." Think tender roast goose, fragrant beef char siu, and delicately crafted dim sum like honey-glazed pork buns and traditional chicken rolls. Each dish reflects the culinary expertise and cultural heritage of Lingnan cuisine, tailored to satisfy modern palates even in the unique environment of high-altitude dining.

Travellers will also enjoy curated menu options such as the "Signature Roast Pork Rice Set," featuring Cantonese-style roast pork paired with side dishes like ginger-infused baked egg crisps, heritage-inspired pastries, and seasonal desserts. It's not just a meal; it's a cultural experience.

Creating authentic Cantonese flavours for in-flight dining wasn’t without challenges. The teams at Nanland Air Catering and China Hotel meticulously adapted traditional recipes to ensure they retained their taste and texture, even at cruising altitude. Countless trials and tastings resulted in a menu that meets rigorous aviation standards while staying true to Cantonese culinary roots.

The collaboration doesn't stop here. With the launch of a collaboration studio, Nanland Air Catering and China Hotel are set to expand their offerings. From enhanced business class meals to innovative personalized dining options, passengers can look forward to an ever-evolving menu.
