A French brewer creating beers infused with Cantonese flavours

In 2011, Frenchman Jeremy Guillou married a local girl and he moved to Zhongshan. He believes that Zhongshan is a livable city, and is very similar to his hometown, Nantes, France. 

He grew up around a local brewery since childhood, and so it was natural for him to establish his own beer brand in Zhongshan. He feels that brewing beer is like making Cantonese soup, both of which require preserving the aroma and nutrients of the ingredients as much as possible. He has also incorporated many local elements into his craft beers, such as his unique "Flower Beer" with Xiaolan chrysanthemum and "Kung Fu Beer" with the traditional Chinese medicine Eucommia (Duzhong). He himself is also a kung fu enthusiast and practices the "mantis knife" in his spare time. 

During his 14 years of living in Zhongshan, he also adapted to local customs and fell in love with the local cuisine. He said, "The more I learn about the Chinese history and philosophy, the more I understand and the more I want to continue to learn more."
