What’s in this year’s Guide?

This year, Jiang by Chef Fei became the first Guangzhou restaurant to receive two stars. Jiang by Chef Fei received one star in 2018 and since then has propelled itself to a new echelon, striking a balance between tradition and innovation while integrating Japanese and western elements into Cantonese cuisine. Popular dishes in this restaurant include roast chicken with flaxseed and Hele crab steamed with sticky rice in lotus leaves.

Here’s a list of winners from Michelin’s 2019 guide to Guangzhou, including seven household names you may remember from the previous year, as well as three new rising stars.

Three new rising stars at a glance:

Famous Cuisine

The restaurant’s founders have always been devoted to maintaining traditional flavors of Cantonese cuisine since it opened in 2006. Traditional styles can be seen from the unified special menus to all the dishes. The soy sauce chicken is seasoned with with luo han guo (siraitia grosvenorii) instead of sugar and the brown sugar trotters contain a gingery tinge for the palate.

Imperial Treasure Fine Chinese Cuisine

Affiliated with a Singapore catering group, Imperial Treasure Fine Chinese Cuisine attaches great importance to the selection of ingredients. Its crispy suckling pig with sticky rice, shrimp balls with white truffles and cuisine in seasonal menus are well worth a try.

Song

Named after the Song Dynasty, ‘Song’ is also the last name of the restaurant owner. Most of the dishes are traditional Sichuan dishes prepared by Sichuan chefs. Popular dishes include boiling tiger grouper, Beijing roast duck with fruit-tree wood and spicy crab.
