Cool Chinese dishes for summer

During summer there's a few things that are just too hot to consider eating. No need to get overheated, there are some Chinese foods that are made to chill your bones.

Green Bean Soup (Lǜdòu Tang 绿豆汤)

Also referred to as mung bean soup in English, it is a chilled soup that serves one purpose, and that's to chill your mouth and stomach. This nutrient rich bean soup is packed with all of the right vitamins to serve as healthy choice to detox the body. This soup normally has a natural green look to it but sometimes have other colored appearances with the mix of other beans. It's a cool dish for the hot summer days you'll be up against.

Turtle Jelly (Guīlínggāo 龟苓膏)

This isn't just any old jelly, this is China's very own turtle jelly. Turtle jelly is a long-established traditional medicated diet. It is said that it was originally a valuable medicine for the emperor in the Qing Dynasty. This snack treat has the nourishing powers to provide health benefits for the skin, the blood, and the stomach. It is also believed to help the body reduce heat stress, which seems to make it a practical food choice during the dry-heat of summer.

Cold Noodles (Liángmiàn 凉面)

Looking for something other than a bowl of hot noodles? Call off the search because there's an alternative known as liangmian, or simply called cold noodles. There are many different variants of cold noodles that has its own unique styles across China. The finishing touches and the ingredients differ by province however, the process is still the same. After being boiled the noodles are then soaked in cold water and later it is flavored to perfection. The cold dish is a not only a refreshing meal that can cool you down but can also satisfy your hunger.

Liangpi (Liángpí 凉皮)

Liangpi originated from cuisine in the Guanzhong area of Shaanxi Province, is the collective name for the noodles, dough, rice and wine. Popular in northern China. It is a rare natural green pollution-free food. Similar to liang ban, it is a form of cold noodles but different in appearance and texture. It is often prepared as a lone dish that has a spicy flavor lingering underneath the noodles cool sensation.
