Ingredients
125g fresh brown breadcrumbs
90g demerara sugar
75g drinking chocolate powder
2 tablespoons instant coffee
300ml double cream
150ml single cream
60g plain dark chocolate grated
Instructions
1. In a bowl, mix together the breadcrumbs, sugar, drinking chocolate, and coffee granules. In another bowl, whip the creams together until they form soft peaks.
2. Spoon half of the cream into six glass serving dishes. Cover with the breadcrumb mixture and then with the remaining cream. Chill for at least six hours, or overnight for best results.
3. Sprinkle generously with grated chocolate just before serving.
Cook's know-how
To make grating chocolate easy, chill it well in the refrigerator before you grate it, and use the largest holes on the grater.
