Savoring the king of freshwater fish

STANDING at the southern tip of China's mainland, Shenzhen does not lack good fish. Still there are some fishes so special that you may be startled by the prices on menus. Sturgeon is one of them. In some hotels, a sturgeon banquet with a dozen dishes can cost over 2,000 yuan.

  Rareness is one of the reasons to explain the astonishing price. Dubbed a "living fossil, sturgeon was once on the brink of extinction from being overfished. For the reason, fish in the Yangtze River were once protected. Though advanced breeding technology has saved the sturgeon from extinction, it is only recently that farmed sturgeon has started to appear in markets.

   But this is not the real reason fish." Nutritionists say that the fish meat, as well as being tender in texture, has a very high nutrition value. This has set the tone for its popularity among local gourmets.

To find a hotel that serves sturgeon is not difficult, but to locate one that serves it at a reasonable price takes time. Holiday Inn Donghua Shenzhen is said to be the best place to eat sturgeon at a low price.

   Sturgeon costs only 9.6 yuan per 100 grams there. Liu Yaosen, head chef of the Chinese restaurant at Holiday Inn Donghua said that for 50 yuan, you could enjoy one jin (500 grams )of sturgeon, and by paying an extra 10 yuan, you could have the sturgeon cooked by two different methods. "This is definitely the lowest price you can get in town," Liu said proudly.

   Low price doesn't always result in low quality. At Holiday Inn Donghua, a few different cooking methods created by chef Liu to distinguish their sturgeon with that of others. If steamed sturgeon and deep fried sturgeon with pepper and salt sound too commonplace to you, how about stewed sturgeon rolls with shark's fin? This is the newest dish created by Liu that features the smoothness and tenderness of sturgeon, with its nutrition value added by shark's fin. Or you can try the braised sturgeon's head with turnip. That will give you a different taste of sturgeon surely.

  With Holiday Inn Donghua's move to bring the prices down, sturgeon's day has come.
