On November 12th, the "Fine Cantonese Food By the Michelin Guide: Asia-Europe-United States 2018-2019" was released in Guangzhou. It is the first time that Michelin has released a guide for one single cuisine since 1990, aiming to record and recommend Cantonese cuisine around the world.
Cantonese cuisine is one of the “Four Great Traditions” of Chinese cooking. Developed in the Lingnan region, it is known for its precise techniques and large variety of ingredients, meticulous control of time and heat during cooking, and the diversity of its cooking methods. These all make Cantonese cuisine shine brightly on the global culinary stage.
Gwendal Poullennec, the international director of the Michelin guide, said: “As one of the most famous Chinese cuisines, Cantonese cuisine has travelled around the world whilst maintaining a profound traditional culture and constant integrated innovation. By releasing this Michelin guide, we want to show the charm of Cantonese cuisine to the world.”
This guide is also an innovation for Michelin Guides. This time, they have no longer limited the guide to a specific geographical area, but instead focused on a single cuisine, collecting Cantonese restaurants that have been featured in different editions of the Michelin Guide worldwide. As the 33rd Michelin Guide to have been published around the word, its birth attributes to the distribution of Michelin Guide across more than 30 countries and regions, as well as a large number of quality restaurant resources around the world.
“The 2018-2019 Michelin Cantonese Cuisine Guide” covers a total of 15 countries, including China, America, and Italy. The guide is comprised of 78 Starred Restaurants (69 in Asia, 8 in Europe, 1 in America), 62 Bib Gourmands and 151 Plate Restaurants. This wide range of restaurants indicate the richness and diversity of Cantonese Cuisine.
It is believed that with the release Michelin guide, loves of Cantonese food around the world will be able to enjoy high-quality Cantonese cuisine and experience the unique food culture of Lingnan across the globe.
