Ham has a long history, which originates from Tang Dynasty (618 - 907). According to Gleaning Herb (本草拾遗), ham which comes from Jinhua, Zhejiang Province is the best in China.
Legend goes that one famous general in Song Dynasty named Zong Ze from Yiwu County of Jinhua, offered a hometown pickled pig leg as tribute to the Emperor one day. The Emperor named it “Huo Tui (ham in Chinese)” as it red as a fire, which means, the pickled pig leg on fire. Since then, the ham became one of the tributes in ancient China.
Normally speaking, ham is back leg of pig which pickled in freezer. Nowadays, ham from Jinhua not only has a hot sell in China, but also favored by Europeans and Americans.
