Eight Immortals Crossing the Sea ("Baxianguohai" in pinyin, "八仙过海" in Chinese)

The fried mixed vegetable dish is named after a tale about the Eight Immortals crossing the sea. It consists of eight different vegetables or dried mushrooms. There is no fixed ingredient list.

Guangdong people usually use mushroom, black fungus ("muer" in pinyin, "木耳" in Chinese), dried bean curd roll ("Zhizhu" in pinyin, "支竹" in Chinese) and bok choy ("Xiaobaicai" in pinyin, "小白菜" in Chinese), etc.

Black fungus is good for reducing high blood cholesterol while the mushroom has immunity-stimulating effects.

This dish can also help people lose weight and improve physical condition.
