Chicken and wild mushroom hotpot

Fish heads in hotpot is a delicacy of Sichuan cuisine. When combined with wild mushroom the fish certainly gives extra flavor to the traditional hotpot. This innovative combination is available at the newly-opened restaurant located at the junction of 3rd Bagua Road with North Hongling Road.

In fact, you can hardly call it a Sichuan hotpot, as it is as fresh and light as any Cantonese cuisine, --of course, strong pepper sauces and all the other Sichuan seasonings are available if you're inclined to add a little spice to your meal.

The three different wild mushrooms, as explained by Mr. Yang, the owner of the restaurant, are very expensive at around 350yuan per kilogram, as well as being very nutritious, especially the mushrooms grown under pine trees, which are widely enjoyed by Japanese people.

Customers are invited to sample a small bowl of mushroom soup first, which has a very special taste, pure, delicious and fragrant with fresh grass.

Then you may have the traditional fish head. Each fish head is cut into six to eight pieces. They are fresh and taste fresh. After I tried the delicate fish brain, the agar, the cheeks and lips, I wondered who would want to have the body of the fish again?

Fish balls and fish slices are also given a fresh taste at the restaurant. Made with fresh fish and Chaozhou meatball-making techniques, they are fresh and tender. The longer you boil them, the crisper they are.

There are quite a few Sichuan hotpot restaurants in Shenzhen and Shantian is a newcomer. But it is determined to win over customers. "we are not just serving something to eat, " said Mr. Yang, who is originally from Sichuan province, "we are developing a kind of culture here. Sichuan"s fish head pot, which has existed for a long, long time, is part of the culture. I just want to add something new and spec to it ; like the order in which dishes are served, the new combination seems to bring out the best out of it ."so do customers like it ?A woman from northern China, who has lived in Shenzhen for several years, said: "I like the dishes here. Its Sichuan food, but it is very light."
