Huang's Zhanjiang "White cut" Chicken

Chicken is the staple meat in Chinese cuisine and are found in a large number of recipes.
Many kinds of chicken dishes, in terms of flavors and places, can be ordered in Guangzhou, Qingyuan chicken, Dongjiang chicken, Qingping chicken, Taiye chicken, just to name a few famous ones. Some people praised Jiangxi chicken.
A row of restaurants make good Zhanjiang chicken on Nongken Road, the outskirts of Guangzhou.
It's said that lots of laborers from Zhanjiang came to Guangzhou years ago. Some of these out-of-towners opened a restaurant to serve their fellow-villagers with hometown food. Unexpectedly, even local residents of Guangzhou fell in love with the exotic food. More entrepreneurs joined the bandwagon by opening similar restaurants.
Huang's Zhanjiang Chicken Restaurant's exterior, to be frank, was far from elegant. However, the lineup of expensive cars in front of its gate spoke volume about the popularity of this place among the connoisseurs.
The white clean tablecloth and the mahogany furniture were impressive. It was like a Tai Pai Dong, the casual sidewalk eatery which provides meals in a less than hygienic condition. Two flies flew over our appetizer dishes of pickled onions and fried peanuts as soon as we sat down. Since we came all this way we were not going to be turned back by these flies. What we drank was not the usual oolong or chrysanthemum tea, but home made herbal tea from the countryside. And the waitress emphasized it was brought up from the countryside. It tasted slightly bitter with a sweet aftertaste..  The first dish was fried sandworm with ginger slices and inch-long scallion chops.(See picture on the right) Sandworm was exotic even for me.
It turned out these sandworms were caught in the sea near the countryside. The next dish was "white cut pork tripe". "White cut" meant It was cooked with no special sauces, just water boiled.
I liked the dish, though it retained an odor of those substances usually associated with tripes (maybe the trip was not washed enough). The proprietress kept saying her food was from the countryside, meaning it was much more delicious than that in Guangzhou. The Zhanjiang chicken, the main course, was fed and raised in Zhanjiang's countryside. Its flavor was different, savory and smooth to the palate. The sauce was special, of countryside flavor, was mde from cooked soy sauce and peanut oil, plus chipped green onion, smashed ginger and sliced coriander.  The last was a desert dish. It was sweet potato gruel (See picture on the right). This was once people's main food during difficult times. All the things in the countryside are all hard to forget. Access information: It is about 10 minutes by taxi from Guangzhou East Station. For buses, take No. 89 or 54 bus and get off at Nongken road.
